Snack Time!

A few weeks ago I made one of our favorite snacks for a March Madness party and actually took pictures in order to share with you all....and then forgot about it. Then today...two week later...I found them while taking some pictures on my sad little, forgotten, neglected camera. Well, March Madness is halfway done. My boys were out in round 1 so it's not nearly as fun, but I still like to watch the action...probably no more parties though.

I do still want to share these yummy Caramel Corn Puffs with you though. They're very similar to caramel popcorn in taste, but this recipe doesn't use popcorn, so no hulls to stick in your teeth, and thus, smaller children can eat it as well because these puffs just melt in your mouth.

Here is the cast of ingredients: Puffcorn Delites, corn syrup, brown sugar, butter and baking soda.


First, spray a roaster with cooking spray and dump the whole bag of corn puffs in and set aside.


Next, (I did neglect to photograph this part of the recipe...sorry! My hands were sorta full!) boil butter, brown sugar & corn syrup for two minutes, then remove from heat and add baking soda. Mix well and pour over roaster of corn puffs and mix. Bake 1 hour and this is what you get:

Caramel Corn Puffs

10 oz bag corn puffs
3/4 cup butter
1 cup brown sugar
1/2 cup light corn syrup
1 teaspoon baking soda

Boil butter, brown sugar and corn syrup for 2 minutes stirring constantly. Add baking soda to boiled mix and stir until thoroughly mixed. Pour on top of corn puffs and mix completely. Bake at 250 degrees for one hour stirring every 15 minutes. Spread on wax paper to cool. Enjoy!
